1κg Sea Bream from one of the Blue Island Fish Markets

4 springs fresh rosemary

4 bay leaves

1 whole lemon

Coarse salt

Pepper
Instructions
Purchase the Sea Bream, cleaned inside and outside, from one of the Blue Island Fish Markets.
Heat the oven to 240°C.
Put the bream on a heavy oven pan. Season with the coarse salt, on both sides and on the abdomen. Sprinkle plenty of freshly ground pepper all over.
Cook for 5 minutes on each side. Cut the lemon into slices and cover the bream with the rosemary sprigs, bay leaf and lemon.
Put the bream back in the oven and let it cook for 20 minutes. Half way through, turn it over.
Drizzle with olive oil and serve.
Tip: Do not bake for longer because the fish will be dry.
