Ingredients

Quantity:
2 Sole fillets from one of the Blue Island Fish Markets
2 tablespoons mustard
4 potatoes
2 onions
2 Juice of 2 lemons
Salt
Olive oil
Freshly ground pepper
Parsley
Water

Peel and slice the potatoes and boil them in plenty of salted water for about 10 minutes.

Then peel and slice the onions and stew them on a medium heat, in a non-stick frying pan along with 1 glass of water. Once the water starts to boil, add salt, olive oil and the fish. After 3-4 minutes, add the mustard, boiled potatoes and lemon juice to the frying pan. Cover with the lid and let the food cook and the flavours blend for 4-5 minutes.

Serve sprinkled with freshly ground pepper, chopped parsley and drizzle with the sauce from the frying pan.
