1 Sea Bream fillet from one of the Blue Island Fish Markets

1 red pepper

1 yellow pepper

1 green pepper

1 carrot
-
1 sweet potato

2 tablespoons olive oil

Salt

6 sprigs fresh thyme
Instructions
Purchase the boned fillet from one of the Blue Island Fish Markets.
Wash and score the sweet potato. Then add some olive oil, thyme, salt and wrap in baking paper and aluminium foil. Finally, bake in the oven at 180°C for 1 hour.
Cut the peppers and carrot into thin slices.
Brush the fish with olive oil, salt and pepper.
Lay out the fish on a tray, skin side down. Put pieces of peppers, carrot and thyme at right-angles. Wrap the fillet and secure the ends with a toothpick.
Bake at 200°C for 10 minutes.
Serve hot.
