Ingredients

1 kg fresh mussels

2 tablespoons olive oil

2 onions, finely chopped

2 cloves of garlic

15 cherry tomatoes, halved

1/2 Glass of dry white wine

1 glass of fresh cream

150 g Feta cheese

1 teaspoon finely chopped parsley

1 teaspoon finely chopped dill

1/3 teaspoon ground black pepper
Instructions
Purchase the mussels from one of the Blue Island Fish Markets
Put the olive oil into a deep saucepan and fry the onion and garlic over a high heat until soft. Then add the mussels, cherry tomatoes and stir two or three times.
Then add the wine and cover the pan. Leave for about 4 minutes until the mussels open and are cooked. Throw away any mussels that remain closed.
Leave the pan open on a high heat until the alcohol evaporates from the wine and has reduced until there is about half the liquid in the pan.
Add the fresh cream and break the Feta into small pieces by hand. Cook for another 4 to 5 minutes until the sauce thickens. Towards the end of the time, add the parsley, the dill and the pepper and stir. Serve with slices of bread.
