1 fresh Sea Bass from one of the Blue Island Fish Markets

200 g small potatoes

1 lemon

1 orange

1 red pepper

1 mango

50 ml mango juice

5 tablespoons olive oil

10 sprigs parsley

10 sprigs coriander

1 sprig spring onion

50 g unsalted butter

1 pinch ground black pepper

2 pinches salt
Instructions
Purchase the fresh fillet of Sea Bass from one of the Blue Island Fish Markets.
Marinate the sea bass with the lemon zest, orange, 1 tablespoon of olive oil, salt, pepper, parsley, and set aside. At the same time, boil the baby potatoes (unpeeled) in a pan for about 25 minutes.
Then cut the red bell pepper and mango into small cubes. Place in a bowl and add the chopped coriander, spring onion, mango juice, salt, pepper and 1 tablespoon of olive oil.
Put the remaining olive oil in a frying pan and heat until almost burning. Add salt and put the fish with the skin facing down. Leave for two minutes. Turn the fish over for another couple of minutes.
When the sea bass is cooked, remove it from the pan and add the butter and boiled potatoes. Also, add salt, pepper and chopped parsley. Leave until golden brown.
Tip: for a different result with a stronger flavour, marinate and leave the fish in the refrigerator for at least 30 minutes.
