Ingredients

1 Bream (about 700 g) from one of the Blue Island Fish Markets

1 potato, peeled

1 tomato

1 red onion, peeled

1 carrot, peeled

1 sprig celery

1 sliced lemon

3-4 sprigs fresh thyme

2 tablespoons olive oil

2 pinches salt

2 pinches ground black pepper
Instructions
Purchase the cleaned fresh Bream from one of the Blue Island Fish Markets.
Preheat the oven to 200°C and then wash and drain the fish. With a sharp knife, score the fish with diagonal lines.
Cut pieces of aluminum foil and greaseproof paper to a size large enough to completely wrap the baking tray you will use. Lay the greaseproof paper on top of the aluminium foil.
Cut the vegetables into thin slices and lay them on the greaseproof paper. Add a tablespoon of olive oil, salt and pepper and place the bream on top of the vegetables.
Add the lemon slices, thyme, salt, pepper and pour the remaining olive oil over the fish. Wrap the dish completely with the aluminium foil and place in the oven.
Bake for about 40 minutes or so, depending on the oven.
Tip: Better wrapping with the foil gives better results.
