Ingredients

2 Sea Bream from one of the Blue Island Fish Markets

2 parsnips, cut into sticks

1 pack small carrots

1 bowl cherry tomatoes

4-5 sprigs fresh sage

1 orange, sliced

2 tablespoons olive oil

1 shot Ouzo
-
2 star anise
-
Sea salt
-
Ground black pepper
Instructions
Purchase the fresh Sea Bream, cleaned, from one of the Blue Island Fish Markets.
Line a baking tray with aluminium foil underneath and baking paper on top.
Preheat the oven to 170°C.
Season the fish with salt and pepper.
Add the parsnips, carrots, cherry tomatoes, salt and pepper, and the slices of orange. Then place the sea bream in the baking tray and add the star anise and sage. Then drizzle with the Ouzo, olive oil and cover the tray with baking paper and aluminium foil.
Bake for 20 minutes at 170°C. Then uncover and continue baking for another 10 minutes, increasing the temperature to 190°C.
Serve in the tray.
