Ingredients

500 g Mussels from one of the Blue Island Fish Markets

1/4 cup olive oil

3 cloves garlic, sliced

Chilli

2 tablespoons dill
-
1/2 teaspoon lemon zest

White wine
-
4-5 tablespoons parsley, finely chopped

Spring onion, finely chopped

400 g pasta (Linguine or Tagliatelle or Lasagne)

Salt
-
Freshly ground pepper
Instructions
Finely chop the parsley and put to one side. Rinse the mussels thoroughly with plenty of cold water and leave them in a colander to drain.
Boil the pasta in plenty of salted water, following the instructions on the pack. Drain as soon as cooked.
Heat the olive oil in a deep frying pan or saucepan, and then add the garlic, tomatoes, capers, parsley and lemon zest. Add the mussels and season with salt and pepper.
Then, add the pasta for a short length of time, stirring to blend the aromas.
Serve hot.
