6 Sea Bass fillets

1 Green Apple, cut into cubes

2 Celery sticks, cut into thin slices

1 thinly sliced Fennel

2 Spring Onions, finely chopped

5 Dried Apricots, cut into cubes

Juice of 2 Limes

1 tbsp finely chopped Chives

1/3 tsp Chili Powder

Salt

Ground Black Pepper

1 tbsp Olive oil

1 tbsp Apple Cider Vinegar
Instructions
Cut the Sea Bass fillets into cubes and place them into a bowl. Add the lime juice and chili powder, season with salt and pepper and mix.
Leave aside to marinate for 15 minutes and then add the apple, celery, fennel, spring onions, dried apricots, chives, olive oil and apple cider vinegar into the same bowl and mix. Adjust the seasoning if necessary.
Serve in small salad glasses.
