1 kg Shrimps 16/20

2 eggs

1 cup A.P. Flour

1 cup ground Breadcrumbs

Salt

Ground Black Pepper

Oil for frying

Ingredients for the Aioli:

1/2 cup of Sunflower oil
-
1 Egg
-
1 tbsp Dijon Mustard
-
1 tbsp White Vinegar
-
2 cloves of Garlic, crushed
-
Various fresh Herbs (Parsley, Coriander, Thyme)

Salt

Pepper
Instructions
Crack the eggs into a bowl and whisk with a fork. Season the prawns with salt and pepper and bread them with flour, egg and breadcrumbs.
Fry in hot oil for 3-4 minutes, until golden brown.
For the Aioli sauce
Pour the oil into a bowl, add the garlic, egg, mustard, vinegar and herbs and season with salt and pepper. Mix with a hand blender until smooth and homogenized.
