Ingredients

1 kg Sardines

2 tablespoons olive oil

2 cloves garlic, finely chopped

5-6 fresh cleaned thyme (only the leaves)

Zest of ½ a lemon

Juice of 1 lemon

1/2 teaspoon salt

Ingredients for the courgette chips:

2 2 green courgettes cut into round slices

1 tablespoons olive oil
-
1 teaspoon dill, finely chopped
-
Salt
-
Pepper
-
Flour
-
Corn oil for frying
Instructions
Purchase the cleaned Sardines from one of the Blue Island Fish Markets
Method – Courgette chips
Put the courgettes, olive oil, dill, salt and pepper in a container. Stir well and then flour them. Fry in hot oil until golden brown.
Method – Sardines:
Lay out the sardines on a baking tray and add the olive oil, garlic, thyme, lemon zest, lemon juice and salt. Then mix well and leave to marinate.
Grill over the charcoal for 3 to 4 minutes on each side.
Serve the sardines together with the courgette chips.
