2 Salmon fillets (250 g), finely chopped
2 spring onions, finely chopped 
1/2 shot Ouzo 
1 egg
2 teaspoon breadcrumbs 
1 tablespoon dill, finely chopped 
1 teaspoon olive oil 
Sea salt
Ground black pepper 
Ingredients for serving:
4 lettuce leaves 
1 tomato 
Small bread rolls 
Sweet and sour sauce

Purchase the fresh Salmon fillets without the skin from one of the Blue Island Fish Markets 

Put the salmon, spring onions, ouzo, egg, breadcrumbs, dill, salt and pepper in a bowl and stir well. Make small patties of about 50 g each. Cook them in a non-stick frying pan, using 1 tablespoon of olive oil, for about 3 minutes on each side.

Serve on a bread roll with lettuce, tomato and sweet and sour sauce.
