1 large Sea Bream from one of the Blue Island Fish Markets

2 large lemons

Herbs of your choice (dill, spring onion, coriander, parsley, celery)

Instructions
Purchase the cleaned fish from one of the Blue Island Fish Markets.
Sprinkle the fish with salt and pepper.
Next, prepare the spices. If they are fresh, finely chop them and put into the baking tray over the fish.
Then slice one lemon into rings and lay them on top of the fish to give it a nice lemon smell and squeeze the second lemon.
Finally, pour the olive oil and the lemon juice over the fish.
If desired, prepare an oil and lemon sauce with the same ingredients, which can also be poured over the fish for extra flavour when it is cooking.
Put the lemon, oil (as much lemon as oil), oregano, a little garlic, salt and pepper in a food processor. Pour the sauce over the fish (there should be enough to almost cover it).
Bake at 200°C (approx.) for 1 hour and 30 minutes to 2 hours (a larger fish will need more time).
Garnish with chopped spring onion.
Serve with chips (French fries).
