2 whole Sea Bass from one of the Blue Island Fish Markets

2-3 onions, sliced

2-3 tomatoes, sliced

2-3 cloves garlic, cut in half

bay leaves

1 tablespoon cumin

Juice of 2 lemons

Vegetable stock cube

1 cup olive oil

Instructions
Purchase the cleaned Sea Bass from one of the Blue Island Fish Markets.
Wash the fish, marinate them with lemon and salt. Place them separately on a sheet of aluminumfoil along with a sheet of greaseproof paper.
Open up the belly of the fish and insert in two slices of tomato, onion, a bay leaf, half a clove of garlic, with cumin and pepper. Sprinkle with lemon and place a ring of onion, tomato, some cumin and some oil on the back of the fish and close the foil. Place on a baking tray and bake in the oven for one hour or so (depending on your oven) at 230°C.
Put the oil in a pan and fry the onion and garlic until golden brown. Add the water, stock cube, cumin, bay leaf, salt and pepper. When boiling (the water will darken), add the rice and boil for 10 minutes. Then turn off the heat, cover with a lid and leave until the rice rises and absorbs all the water.
Finally, if you want, open the foil and brown them on the grill. Remove the paper, serve on aplate with rice and sprinkle with fresh parsley.
