Ingredients

2 filleted Sea Bass from one of the Blue Island Fish Markets

2 cloves garlic, finely chopped

1 cup parsley, finely chopped

75 g butter

1 cup flour

1 tablespoon olive oil

1/2 cup dry white wine

Salt

1 teaspoon thyme
-
1 teaspoon oregano
-
1 teaspoon pepper

1/2 cup water
Instructions
Dry the fish fillets thoroughly and then coat them in flour, making sure they are completely covered.
Heat the butter in a frying pan. When it has melted, add the olive oil and then the fish fillets. Sauté lightly, 2 minutes each side.
Remove the fish fillets from the pan and add the wine. Then add the parsley, garlic, water, thyme and oregano. Season with salt and pepper and stir gently until it becomes a smooth sauce.
Pour the sauce over the fish and serve hot.
