1 kg Anchovies from one of the Blue Island Fish Markets
Οlive Oil
Juice of 2 lemons
Chilli pepper slices (rings) or chilli flakes
Oregano
Salt
Pepper
Thick slices of lemon

Purchase the cleaned fish from one of the Blue Island Fish Markets.

Wash the anchovies well and drain them in a colander. Spread them out on a baking tray, season with salt and pepper, add a little oregano, (too much will make it bitter) and add the hot pepper in rings or chilli flakes. Add the lemon juice the olive oil, stir vigorously and pour over the anchovies.

Mix everything together by hand, making sure the mixture goes everywhere. Cut thick slices of lemon and spread them over the anchovies.

Add some water and bake at 200°C, for 20-30 minutes, until golden brown, but not dry.
