2 cups village flour or mixed with corn flour
1 teaspoon salt (fine)
Cooking oil

Purchase the squid cleaned and cut into rings from one of the Blue Island Fish Markets.

Heat the oil in a deep frying pan on a high heat. The temperature should be around 185-190oC.

Mix the flour and salt in a bowl.

First, drain the squid well then coat it in the salted flour. Use a container with a lid or a plastic food bag to shake the squid and flour together.

Take a handful of the coated squid and place in a fine colander. Knock it 2-3 times to shake off any excess flour and to separate the squid rings.

Quickly toss the squid rings into the hot oil, ensuring that they are separate from each other. They should not be stuck together.

The hot oil should completely cover all the squid. Leave to brown on one side, then using a slotted spoon, turn them 1-2 times in the hot oil to brown all over. Ensure that the cooking time is not more than three minutes.

Place them on a dish covered with absorbent paper to dry for 1-2 minutes, then sprinkle with lemon juice. Best served hot. Crispy and irresistible!
