Ingredients

1 side of salmon, with the skin

1 pack ready-made sage stuffing mix *

Zest of 1 orange

1 tablespoon olive oil

2-3 pears, cut into thin slices

1/2 bunch chives, finely chopped (for serving)

1 teaspoon Salt

1/3 teaspoon ground black pepper

1 jar cranberry jam

1 glass orange juice
Instructions
Put the salmon with the skin down in a non-stick baking dish, then marinate in the olive oil, orange zest and orange juice, salt and pepper. Then add the pear slices until they cover the whole surface of the salmon, and then spread the crust mixture over the pear.
Cover the dish and bake in a preheated oven at 180°C for 25 to 30 minutes.
While waiting for the salmon to cook, put the lemon juice and orange juice into a small saucepan and place on a medium to high heat until it thickens.
When the cooking time has elapsed, uncover the salmon and bake for another 5 minutes until golden brown.
Serve with the sauce drizzled over the salmon.
