Ingredients for the Yellow Lentils:

1 cup of Yellow Lentils

2 tbsp Olive Oil

1 medium sized onion, chopped

1 cup Orange Juice

2 cups Water

1 Vegetable Stock cube
-
Juice of a Lemon

tsp Margarine
-
Salt

Ingredients for the Prawns:

1 kg Prawns 16/20 size
-
1 tbsp Olive oil
-
Zest of half a lemon
-
2-3 Sprigs of fresh Thyme

Salt
-
Ground Black Pepper
Instructions
Pour the olive oil into a saucepan and sauté the onion until soft. Add the lentils, vegetable stock cube, orange juice, water, lemon juice and salt. Cook over medium-high heat for about 20 – 25 minutes. Once cooked, strain the excess liquid and pour the mixture into a blender bowl. Add the margarine and blend into a smooth puree.
Next, place the prawns into a bowl and marinate with olive oil, lemon zest and thyme. Season with salt and pepper and mix. Cook under a grill or in a grill pan for 2 minutes on each side.
Skewer the prawns onto sticks and serve with the yellow lentil puree.
