1.5 kg Sea Bass from one of the Blue Island Fish Markets

1 vegetable stock cube

200ml Olive Oil

2 tablespoons rosemary, finely chopped

Thyme

A few sprigs of rosemary for inside the fish

1 teaspoon coriander

2-3 lemons

A few fresh basil leaves

4-6 tomatoes, peeled and finely chopped or 1 can chopped tomatoes
Instructions
Purchase the Sea Bass from one of the Blue Island Fish Markets.
Dissolve the vegetable stock cube in 2 tablespoons of olive oil, add the rosemary and thyme and stir well. Brush the sea bass on the inside and outside with the mixture. Stuff the bellies of thefish with rosemary.
Then sprinkle with lemon, place the fish in a baking tray and bake in a preheated oven at 200°C for about 25 minutes (depending on the size of the fish).
To prepare the sauce, put 150 ml of olive oil, coriander, lemon juice and basil leaves in a saucepan. When it comes to the boil, lower the heat, add the tomato and simmer for 1-2 minutes.
Remove the sea bass from the oven, place it on a platter and pour the tomato sauce over it. Garnish with sprigs of fresh coriander and lemon slices and serve immediately.
