Ingredients

2 Sea Bass, 500-600 g each, from one of the Blue Island Fish Markets

500 g green beans

1 kg potatoes

150 g pesto

1 onion, grated

1 clove garlic

1/2 litre fresh cream

1 cup dry white wine

All-purpose flour

100 ml olive oil

Instructions
Purchase the Sea Bass, boned and filleted, from one of the Blue Island Fish Markets.
Cut the potatoes into sticks, and then sauté the onion and garlic in a frying pan. Then add the potatoes, green beans and the stock sauté for another 5 minutes over a medium heat, douse with the wine and add the fresh cream, let it settle, and add the pesto. If the potatoes are not completely cooked, add some water and cook for another 5 minutes.
In the meantime, put some olive oil in a hot non-stick frying pan, flour the fish fillets and sautéthem skin-side first for 2 minutes and then another 2 minutes on the other side.
Serve the potatoes with the cream and the fish on a layer of pesto.
