Ingredients

2 Sole fillets from one of the Blue Island Fish Markets

1 cup all-purpose flour

2 cup olive oil for frying

Salt

Pepper
-
Lemon slices

Parsley, finely chopped
Instructions
Dry the fish with kitchen paper.
Heat the oil, taking care not to overheat it.
Put the flour in a deep container and flour the fish fillets. Then fry the sole for about 5 minutes on each side until golden.
Place on a platter covered with kitchen paper and season with salt and pepper. Garnish with chopped parsley and lemon slices. Serve immediately while hot.
It can be accompanied by Basmati rice or the classic chips (French fries).
