1 kg Mussels from one of the Blue Island Fish Markets

Water

Coarse salt

5 slices bread (breadcrumbs)

Olive oil

50 g Parmesan cheese, grated

3 cloves garlic, finely chopped

1/4 bunch parsley, finely chopped

A little basil, finely chopped leaves

1 teaspoon fresh oregano

Instructions
Remove any hairy fibres from the mussels and wash well.
Preheat the oven to 230°C (fan oven).
Using a large pan with a lid; put the mussels in water on a high heat. Allow to boil for 3 – 4 minutes to open the mussels. Discard any mussels that don’t open.
Next, move the mussels to a bowl using a slotted spoon and keep the liquid. Remove the half shells.
Put coarse salt in an oven tray, place the mussels in the half shell and sprinkle them with some of the juice you have kept.
In a bowl, mix together the breadcrumbs, olive oil, parmesan, garlic, parsley, basil, oregano and salt.
Divide the mixture up equally in the mussels.
Bake for 15 minutes and serve.
