Ingredients

500 g Calamari from one of the Blue Island Fish Markets

3 medium size potatoes

1 onion, thinly sliced

2 cloves garlic, finely chopped

1/2 cup fresh tomato paste

1/2 teaspoon cinnamon

3 allspice berries

1 bay leaf
-
1 cup olive oil

1 cup water (for topping-up during cooking)

1 teaspoon salt

1/2 teaspoon pepper
Instructions
Ask at one of the Blue Island Fish Markets for the Calamari to be cleaned.
Wash the squid and let them drain.
Finely chop the onion and garlic.
Chop the potatoes into cubes.
Heat the olive oil in a saucepan, add the chopped onion and sauté for about 5 minutes, stirring until the onion is transparent.
Then place the calamari in the saucepan and sauté for another 5 minutes, all over, until the water has evaporated.
Then add the fresh tomato paste, the potatoes, salt, pepper, cinnamon, allspice and bay leaf. Cover with water.
Cover the saucepan and cook over a medium heat for about 45 minutes.
