Ingredients

Quantity:
1 kg Sardines, cleaned, from one of the Blue Island Fish Markets
Olive oil
Juice of 2 lemons
1/2 lemon, thinly sliced and halved
1 lemon, thickly sliced
Oregano
Salt
Pepper

Purchase the cleaned fish from one of the Blue Island Fish Markets.

Preheat the grill in the oven.

Wash the sardines thoroughly and dry them with absorbent paper.

Mix the oil with the lemon juice and add plenty of salt and pepper. Dip the fish in the lemon oil mixture. Then spread out the sardines on a baking tray along with the thin lemon slices. Then drizzle them with as much of the oil and lemon mixture that is left over, add oregano and bake for 2-3 minutes on each side, until golden brown.

Serve with the thick slices of lemon.
