1 kg Bogue, cleaned, from one of the Blue Island Fish Markets
2 cloves garlic, crushed
Salt
Pepper
Oregano
Rosemary leaves
Olive oil
Lemons

Wash the bogue, salt them well inside and out and drain them in a colander.

For the sauce: Mix the garlic, oregano, rosemary leaves, olive oil, salt and pepper in a bowl.

Then grease a non-stick baking tray and lay out the bogue in it. Then drizzle with the sauce. Finally, bake under the grill at 200°C until golden brown.

Serve with plenty of oil and lemon.
