1 kg Slipper Lobster from one of the Blue Island Fish Markets

1,5 litres of water

Pepper

Salt
-
1 lemon, sliced

Juice of 1 lemon

2 bay leaves

Olive oil
-
Chopped parsley
-
Fresh Oregano
Instructions
Heat the water in a saucepan and add the salt, the lemon slices, oregano and bay leaves. As soon as the broth warms up, add the slipper lobster and cook for 20 minutes.
Allow to cool in the liquid, then drain. Using a large knife cut the lobster in half lengthwise and put on a platter.
Drizzle with lemon and garnish with chopped parsley.

Tip: Allow 10 -12 minutes cooking time for each 500 g of Slipper Lobster.
