Ingredients

Quantity:
1 kg Sardines‏ from one of the Blue Island Fish Markets
6-7 cloves garlic, sliced
Juice of a lemon
1 teaspoon oregano
Olive Oil
Salt
Pepper
‏Parsley, finely chopped (optional)

Purchase the cleaned Sardines from one of the Blue Island Fish Markets.

Wash the sardines under plenty of running water, flour them and place them in a frying pan next to each other and fry.

Then after removing the oil from the frying pan by tilting it to one side, add the garlic, sprinkle with lemon juice, oregano, salt, add ½ cup of water and put the pan back on the heat.

Let it simmer for about 10 minutes with a closed lid and then remove from the heat.

Serve the sardines on a platter and sprinkle with chopped parsley if desired.
