Ingredients

1 kg fresh Bogue, cleaned, from one of the Blue Island Fish Markets

1/2 cup flour

1/2 cup corn flour

Salt

Pepper

Olive oil for frying

For the salad:

20 cherry tomatoes, cut in half

1 medium size onion, sliced

2 cloves garlic, finely chopped

2 tablespoons parsley, finely chopped

1 teaspoon fresh oregano
-
12 black olives, finely chopped

1 teaspoon honey
-
1 cup olive oil

2 tablespoons vinegar
Instructions
Put the cherry tomatoes, onion and garlic in a baking tray. Drizzle with olive oil and bake for about 10 minutes in a hot oven. Then put them in a container (with the liquid). Add the olive oil, vinegar, parsley, oregano, olives and honey. Season with salt and pepper and stir gently.
Put the flour, corn flour, salt, pepper in a bowl and stir. Coat the fish in the flour and fry in hot oil for 5 minutes on each side.
As soon as they are golden brown, put them on a plate or platter covered with absorbent paper. Serve covered with the sauce.
