Ingredients

1 Flounder fillet

1 tablespoon olive oil

2 cloves garlic

Juice of 1 orange

Zest of ½ orange

100 g butter, cubed

1/2 glass fresh cream (or any vegan cream of your choice)

Salt

Pepper

1 cup peas

Paprika (for serving)
Instructions
Heat the olive oil in a frying pan, and then add the garlic, fresh thyme and the Flounder. Fry over a medium heat for 2 to 3 minutes on each side of the fish. Remove the fish from the frying pan and add the orange zest and orange juice. Bring to the boil and add the fresh cream. Lower the heat and add the butter, stir until the sauce melts and then thickens.
Put the fish fillets back in the pan and add the peas, and season with salt and pepper. Cook on a low heat for another 2 minutes. Serve the fillets sprinkled with some sweet paprika.
