Ingredients

1 kg Prawns 16/20

1 Bruschetta sliced (about 1-2cm thick)

2 tbsp Olive oil

5-6 springs of Fresh Thyme

2 cloves of Garlic, chopped

2 spring Onions, finely chopped

3 tbsp Cream Cheese

100 g Feta

1/2 bowl of canned Sweet Corn

1 tbsp. Chives, finely chopped

Salt
-
Ground Black Pepper

Dill for garnish
Instructions
Pour a spoonful of olive oil into a pan and sauté the garlic and onion until soft, add the Prawns and cook for another two minutes.
Add the feta, cream cheese, sweet corn, chives and pepper. Chill in the fridge for 30 minutes.
Place the sliced bruschetta on a baking tray and drizzle with the remaining olive oil, add the thyme and season with salt. Bake in a preheated oven at 170 °C for 8-10 minutes until crispy. Remove from the oven and set aside to cool.
Using two spoons, pour the prawn mixture on the bruschetta slices and garnish with fresh dill.
