Ingredients

2 cleaned Sea Bass from one of the Blue Island Fish Markets

2 cloves garlic

Fresh fennel (to taste)

Oregano (to taste)

1 spring onions (the white and soft green part), finely chopped

Freshly ground pepper

Coarse salt

For the aromatic oil and lemon sauce:

1/2 cup olive oil
-
1/4 cup lemon juice
-
2 pinches salt
-
1 tablespoon mustard
-
Freshly ground pepper

Oregano
Instructions
Season the fish with salt and pepper and put the oregano, garlic, onion and fennel inside the bellies.
While the charcoal is heating up, let the grill get hot, and mix together all the ingredients for the oil and lemon sauce in a blender.
Place the fish on the grill in a row and cook for about 5 minutes on each side over a high heat, so as to create a crust on the outside which helps to keep the juices of the fish inside.
Then raise the grill, turning the fish at regular intervals, and cook for another 10-15 minutes over a medium heat (depending on the size of the fish).
Serve accompanied by the aromatic oil and lemon sauce and the parsley.
