1 kg Atlantic Mackerel from one of the Blue Island Fish Markets
6 potatoes
1 onions
3 cloves garlic, finely chopped
1 fennel root
2 small tomatoes
Olive oil
Coarse salt
Pepper

Purchase the cleaned fish from one of the Blue Island Fish Markets.

Peel the potatoes and cut them into thin slices.

Cut the tomatoes into slices. Put the potatoes and tomatoes at the bottom of the oven pan.

Add the chopped onions, chopped garlic and chopped fennel.

Add the olive oil, a little water, salt and pepper. Bake in the oven at 160-170°C for about 1 hour.

Having seasoned the fish with salt and pepper, put them in the oven pan too.

Pour a little olive oil over the fish and bake for another 30-45 minutes or so, depending on the size of the fish.

If more liquid is needed, add ½ glass of white wine, or even some water.
