Ingredients

500g linguine

2 tablespoons olive oil

10 cherry tomatoes, halved

1/2 bunch spring onion, finely chopped

2 cloves garlic, finely chopped

1/2 glass white dry wine

1 shot Martini
-
1/3 bunch chives, finely chopped

2 cups tomatoes, grated

1 teaspoon tomato paste

Zest of 1 orange

Salt

Pepper

Juice of 1 orange
Instructions
Bring a saucepan of lightly salted water to the boil on a high heat. Put the lobster in the boiling water and cook for 7 to 8 minutes. Remove the lobster from the pan and let it cool. Keep a little of the stock to add to the sauce.
Carefully clean the lobster from its shell and then cut into small pieces. Leave the claws whole.
In a frying pan, heat the olive oil and fry the spring onion together with the garlic for 2 minutes. Add the cherry tomatoes, lobster, orange zest and orange juice, and stir. Then add the tomato paste, douse with the wine and flambé with the Martini. Let the alcohol evaporate and add the tomato juice, turn the heat down and season with salt and pepper.
When the sauce thickens, add the boiled linguine, the chopped chives and then serve.
