Ingredients

Quantity:
4 Fish fillets (Salmon or Tuna) from one of the Blue Island Fish Markets
500 g pasta (Fusilli or Penne)
1 cup chopped mushrooms
1/3 cup grated Parmesan cheese (low-fat)
1 teaspoon breadcrumbs
Thyme
1/2 cup spring onion, finely chopped
Garlic
Tomato sauce
Olive Oil
Salt
Pepper

Purchase the Salmon or Tuna fillets from one of the Blue Island Fish Markets.

Preheat the oven to 250°C.

Put the breadcrumbs, thyme and parmesan in a bowl and mix well.

Coat each fillet in the mixture and bake them in the oven for 20 minutes.

Then boil the pasta and drain.

After preparing the pasta and fillets, heat olive oil in a non-stick frying pan. Add the spring onions, garlic, mushrooms, tomato sauce and mix all the ingredients together.

Then add the pasta to the frying pan and season with salt and pepper.

Serve the pasta on a plate with the fish on top. Drizzle with olive oil.
