Ingredients

Quantity:
2 cleaned Sea Bream from one of the Blue Island Fish Markets
2 carrots, thinly sliced
2 potatoes, thinly sliced
1 broccoli (the florets)
2 sticks celery with the leaves, finely chopped
4-5 sprigs parsley, finely chopped leaves
2 cloves garlic, sliced
2 bay leaves
1 teaspoon dried thyme, crushed
4 tablespoons olive oil
Juice of a lemon
1 cup dry white wine
Salt
Pepper

Ask at one of the Blue Island Fish Markets for the fish to be filleted.

Grease a baking tray and add the potatoes, courgettes and onions. Next, sprinkle with the parsley and celery. Then lay the fillets on top of the vegetables, season with salt and pepper and add the lemon juice, olive oil and wine.

Cover with aluminium foil at the start, so that it doesn’t burn, and bake for about 50 minutes at 180°C in a preheated oven.
