Ingredients

20 medium size Shrimps from one of the Blue Island Fish Markets

1 onion, finely chopped

1 pack chopped tomatoes or 400 g tomato, finely chopped

1 tablespoon tomato purée

1 pack (500 g) Orzo pasta (Kritharaki)

1/2 cup olive oil

1 cup white wine
-
2 cloves garlic, crushed

1 tablespoon parsley, finely chopped

1 tablespoon coriander, crushed

Salt

Pepper

Hot water

Parmesan cheese, grated (optional)
Instructions
Ask at one of the Blue Island Fish Markets for the Shrimps to be cleaned. They should be left with the heads and tails.
Preheat the oven to 200°C.
Preparation:
Crush the coriander in a mortar or a spice grinder. Finely chop the onion and tomatoes (if not using packet tomatoes).
Heat the olive oil in a deep saucepan and sauté the onion, garlic and shrimps. Once they are fried, add the orzo pasta, sauté for another 5 minutes and douse with the wine. Add the tomato and tomato paste (dissolved in warm water). Add salt, pepper and coriander. Stir well and add warm water.
Transfer the food to a ceramic pot, add the parsley and cover with the lid. Bake for about half an hour in the preheated oven. From time to time stir well and add boiling water whenever needed.
Add the shrimps, covering them with the orzo pasta and chopped parsley. Add more water if necessary. Continue baking for another 15 minutes.
Serve with grated Parmesan cheese (if desired).
