Ingredients

300 g Fish fillet of your choice from one of the Blue Island Fish Markets. Boiled or Fried.

2 tablespoons cream cheese

Parsley, finely chopped

Dill, finely chopped

Flour

Breadcrumbs

Egg

Seed oil (for frying)

Zest and juice of a lime

Mayonnaise (for serving)
Instructions
Various fish (of your choice) can be used for this dish, for example, Sea Bass, Cod or Perch.
Purchase the cleaned fish from one of the Blue Island Fish Markets.
Cook the fish, then put the flesh in a bowl along with the other ingredients for the croquettes. Mix them all together well with a fork until you have a smooth mixture.
With damp hands shape the mixture into croquettes in the shape of your choice. Place them onto a baking tray covered with baking paper. Put in the freezer for at least 3 hours.
Afterwards, if so desired, once they are well frozen, they can be put in a freezer bag or container and be stored in the freezer for up to two months. They can then be taken out and used when needed.
Take the croquettes from the freezer and coat them first with the flour, then the egg and finally with the breadcrumbs.
Fry them in a broad, shallow frying pan with olive oil (2cm depth) at a temperature of 180°C, Allow to drain on plenty of kitchen roll, to remove any excess oil, and serve with the mayonnaise.
