500gr. cleaned Anchovies from one of the Blue Island Fish Markets
1 onion, finely chopped
2 Olive oil
1/2 cup white wine
200gr. tomato sauce
Salt
Freshly ground pepper
2 tablespoons parsley, finely chopped

Purchase the fish from one of the Blue Island Fish Markets.

Place a large non-stick pan on the heat to warm up.

Put the olive oil in a large non-stick frying pan and when hot, add the chopped onion and sautéfor 1-2 minutes.

Add the anchovies, in a row next to each other, and douse with the white wine.

Continue by adding salt, freshly ground pepper and tomato sauce, cover the pan with the lid, reduce the heat to half and let it cook for about 8 minutes.

Finish by adding the chopped fresh parsley and serving.
