Ingredients

600 g Bream Fillet, chopped, without skin or bones, from one of the Blue Island Fish Markets

400 g potato, peeled and cut into small pieces

10 g olive oil

Zest of 1 large lemon

Juice of 1 lemon

1/2 teaspoon thyme

2 tablespoons parsley, chopped

100 g flour

2 medium eggs, lightly beaten

120 g breadcrumbs

For cooking:

3 tablespoons olive oil

Salt

Freshly ground black pepper

For serving:
-
2 tablespoons apers, drained and rinsed
-
1 tablespoon coriander, chopped
-
A little red onion, finely chopped

Hot pepperoptional
Instructions
Boil water in a pan with salt and add then add the potatoes. Boil for about 10-15 minutes until they are soft. Next, drain the water and then, using a potato masher, mash them until smooth. Transfer the mashed potatoes to a bowl and mix with the olive oil, the lemon zest and lemon juice, parsley, thyme, salt and pepper.
At the same time simmer the pieces of sea bass in salted water for about 1 minute. Drain and put into the bowl with the mashed potato.
When the mixture has cooled down, mix it all together by hand.
Then divide the mixture into 8 equal amounts and shape into patties.
Dip the patties first in the egg, then in the flour and finally in the breadcrumbs, turning them over to make sure they are evenly covered.
Line a baking dish with greaseproof paper, sprinkle the patties with a little olive oil and season with salt and pepper.
Bake in a preheated oven at 180°C (fan) for 25 -30 minutes.
Serve with capers, coriander and a little chopped red onion.
