Ingredients

2 large Squid from one of the Blue Island Fish Markets

2 spring onions, finely chopped

10 cherry tomatoes, cut into quarters

1 clove of garlic, thinly sliced

1/3 cup olive oil

1/2 cup dill, finely chopped

1 tablespoon rosemary, finely chopped

Salt
-
Pepper
Instructions
Purchase the cleaned Squid from one of the Blue Island Fish Markets.
Make shallow cuts in the upper side of the squid. Sprinkle with the herbs, garlic, salt and pepper.
Fry the onions on a high heat until they start to brown. Add the whole squid and let them sauté for two minutes on each side. Remove from the heat and empty the contents of the frying pan into an oven dish. Add the chopped cherry tomatoes.
Grill at 220℃ for 15-20 minutes (medium height). Coat the squid with its juices during the cooking process.
Serve hot with toasted bread.
