Ingredients

4 pieces of Hake from one of the Blue Island Fish Markets

2 tablespoons mayonnaise

2 tablespoons strained yoghurt

2 tablespoons white vinegar

1/8 teaspoon red pepper (optional)

1/4 cup cornflour

1/2 teaspoon Cajun seasoning

1/4 teaspoon salt

2 tablespoons olive oil
-
1/3 bunch coriander (leaves)

4 round buns, white or wholemeal bread
Instructions
Mix the mayonnaise, yoghurt, vinegar and red pepper in a medium size bowl.
Sprinkle both sides of the fish with Cajun seasoning and salt.
Put the cornflour in a bowl and coat the fish in the flour.
Heat 2 tablespoons of oil in a large non-stick frying pan over a medium – high heat.
Add half the fish and cook until golden brown (about 2 minutes per side). Transfer to a tray and repeat with the rest (adjust the temperature if necessary, so as not to burn the remaining fish when cooking them).
