1 kg cleaned Striped Red Mullet from one of the Blue Island Fish Markets

1 Juice of a lemon

1 cup flour

Cooking oil

2 red peppers, diced

2 orange peppers, diced

8 cherry tomatoes, cut in half

3/4 cup dry white wine

4 tablespoons olive oil

Parsley, finely chopped

Instructions
Purchase the cleaned Red Mullet from one of the Blue Island Fish Markets.
Rinse and drain the mullet.
Put them into a basin, basting them with the juice of the lemon, ¼ cup of the wine and salt them.
Mix well and leave to marinate for 15-20 minutes.
Heat plenty of oil in a frying pan. Drain the mullet, flour them and fry them in sections, turning them until golden-brown on both sides. Put them onto absorbent paper to drain.
At the same time, in another frying pan, heat the olive oil and sauté the peppers with the cherry tomatoes for 3-4 minutes until soft. Pour the remaining wine (½ cup) into the frying pan, season the mixture with salt and pepper and cover the pan with a lid.
Lower the heat and simmer for 5-7 minutes, until the liquid is absorbed.
Take the frying pan off the heat and serve the peppers with their sauce on a platter or divided up on plates, put the mullet on top and sprinkle with parsley
