Ingredients

4 Cod fillets

10 dried apricots, sliced

2 tablespoons olive oil

3 tablespoons. spring onion, finely chopped

2 fresh coriander, finely chopped

3 tablespoons raisins

Zest of 1 orange

1/3 teaspoon nutmeg

1/3 teaspoon ground cloves

1/3 teaspoon ground cinnamon

1/3 teaspoon ground black pepper

1/3 teaspoon salt

3 tablespoons pine nuts
Instructions
Lay out the fillets on a platter and marinate them in the olive oil, nutmeg, cloves, cinnamon, salt and pepper and orange zest. Refrigerate for 30 minutes.
Put the raisins along with the orange juice, pine nuts, rosemary, apricots, coriander, and spring onion in a bowl and stir well.
Place the cod fillets in a non-stick baking dish and spread the apricot mix on top of it with a spoon. Bake in a preheated oven for 20 minutes at 180°C.
Serve with rice and pomegranate.
