Ingredients

500 g various boiled fish from one of the Blue Island Fish Markets

500 g large peeled Shrimps, with tail intact from one of the Blue Island Fish Markets

250 g cleaned Mussels from one of the Blue Island Fish Markets

250 g Squid rings from one of the Blue Island Fish Markets

4 small potatoes, diced

2 carrots, diced
-
3 tablespoons celery, finely chopped
-
2 medium size onions, finely chopped

1 ripe tomato, peeled and finely chopped or a can of chopped tomatoes

1/4 cup tomato paste
-
1 cup white wine
-
1 bay leaf
-
4 tablespoons olive oil

4 cloves garlic, crushed

Salt

1 teaspoon turmeric

Saffron

Dried thyme
Instructions
Purchase the fish and seafood cleaned and chopped as required by the recipe from one of the Blue Island Fish Markets.
Let the fish boil for 10 minutes in a saucepan. Then add the prawns, mussels and squid and boil until tender.
Drain and clean the fish (if not purchased already cleaned) and put them on a platter along with the seafood.
Add the potatoes and carrots to the fish stock and boil until tender.
Heat the oil and sauté the onions and garlic. Stir in the tomato paste, tomatoes, turmeric, saffron, bay leaf and thyme, add the wine and mix with the vegetables already cooked, adding the celery,salt and pepper.
Lower the heat and simmer for 10 minutes. Finally, gradually add the fish and seafood and bring to the boil.
Serve hot immediately. It is ideal accompanied by fresh bread.
