Ingredients

1 large Octopus (around 1 kg) from one of the Blue Island Fish Markets

2 tablespoon vinegar

1 onion, grated

2 cloves garlic, finely chopped

1 cup white wine

1/2 cup olive oil

2 tablespoon hot mustard

Juice of a lemon

1 level tablespoon oregano or thyme

Salt

Pepper

Instructions
Purchase the cleaned Octopus from one of the Blue Island Fish Markets.
Wash and drain the octopus well.
Put 1 liter of water in a saucepan with 2 tablespoons of vinegar and boil the octopus for 20 minutes. Take it out, let it cool and cut it into small pieces.
Heat the oil in a large frying pan, sauté the onion and garlic together. Add the octopus pieces and stir well. Douse with the wine. Add the mustard, oregano, lemon juice and a cup of water, plenty of pepper and a little salt. Simmer on a low heat with the pan covered for ½ hour or until the sauce thickens.
Serve on a platter.
Ideal when accompanied by a green salad and/or rice pilaf.
