1 kg large Mussels from one of the Blue Island Fish Markets

1 beer

1/2 teaspoon baking powder

A little parsley, finely chopped

1 tablespoon red vinegar

1 cup flour

Cooking oil

Salt

Instructions
Clean and wash the mussels.
Put the mussels in water, in a wide pot with a lid, over a high heat. Let them boil for 3-4 minutes. Then, using a slotted spoon, transfer them to a bowl and remove the shells.
Put the beer and baking powder in a bowl then mix while slowly adding the flour. Stir until you have a thick batter mix. Season with salt and pepper and add the parsley.
Let the cooking oil get very hot in the frying pan and then one-by-one dip the mussels in the batter mix. Transfer them to the pan. Fry for very short time, about 2-3 minutes to cook on both sides and then let them dry on kitchen paper.
Serve hot!
