8 large cleaned Prawns from one of the Blue Island Fish Markets

20 small filo pastry squares

200 g chopped carrot

1 onion, finely chopped

80 g soya bean sprouts

3 chopped cabbage leaves

1 clove garlic

A little soy sauce

2 teaspoons corn oil

For the puff pastry:

200 g flour
-
110 ml water
-
20 ml olive oil

A pinch of salt
Instructions
Purchase the cleaned Prawns from one of the Blue Island Fish Markets.
For the pastry:
Mix all the ingredients together and knead well. Let the dough rest for 1 hour, then roll out very thin sheets and cut them into small squares.
For the filling:
Using the corn oil, first sauté the onion and garlic in a non-stick frying pan, then add the carrots and let them cook a little too. Once the carrot has softened, add the cabbage and let it boil for 5-10 minutes until soft. Then add the soya sprouts. Once all the vegetables are ready, add the prawns (whole) and soy sauce. Cover and allow them to boil for 5 minutes. Making sure there’s no water left in the pan, remove from the heat and allow them to cool.
Take 2 squares of the pastry together, sprinkle with a little oil, add some filling and close them uplike a spring roll. Spread them out on baking paper in an oven tray and bake in a preheated oven at 180°C for 10-15 minutes.
