Ingredients

500g cleaned Anchovies from one of the Blue Island Fish Markets

1 cup olive oil

1 tablespoon mustard seeds

2 chilli peppers

4 spring onions (the white and soft green part), finely chopped

12 basil leaves, finely chopped

1 Zest of a lemon (preferably biological)

2 cloves garlic, finely chopped

1 bay leaf

Salt
-
Freshly ground pepper
Instructions
Purchase the cleaned Anchovies from one of the Blue Island Fish Markets.
Preheat the oven to 190°C. Rinse the anchovies and let them drain.
Then grease a baking tray with olive oil and spread out the anchovies in a single layer. Mix the olive oil, basil, spring onion, garlic, mustard seeds, lemon zest, bay leaf, salt and pepper in a bowl.
Put the mixture on top of the anchovies, add the chilli peppers and bake in the oven for 15-20 minutes.
