Ingredients

1 1/2 cups medium size Prawn from one of the Blue Island Fish Markets

1/3 cup vinegar

2 avocados
-
2-3 small onions, finely chopped

10 cherry tomatoes, cut in half

1 tablespoon dill, finely chopped

1 medium size cucumber, very thinly sliced

2-3 sticks celery, finely chopped

For the dressing:
-
1/4 cup olive oil
-
2 tablespoons lemon juice
-
1 tablespoon mild mustard
-
1/2 hot chilli pepper, finely chopped (optional)

1/2 teaspoon salt
Instructions
Boil some water in a small pan and add the vinegar and prawns. Boil for half a minute and strain.
Peel the avocados, cut them in half and then into slices. Sprinkle the avocado with the juice of half a lemon, so it doesn’t turn black. Place them in a large salad bowl and add the onions, cherry tomatoes, dill, cucumber and celery. Add the prawns and mix the salad well.
To prepare the dressing:
Put the mustard, lemon juice, chilli, olive oil in a bowl and stir until the mixture is well-mixed and smooth.
Drizzle the salad with the dressing and serve.
